Amatriciana pasta

Amatriciana is the term indicating a pasta recipe, strictly bucatini, or at most spaghetti, typical of regional cuisine, which takes its name from Amatrice, a town in the province of Rieti, in Lazio. In ancient times the amatriciana sauce included only oil, bacon, chili pepper and pecorino cheese, today tomatoes are also added.
