Astringent

Definition of a substance that "binds" the teeth and palate, causing an unpleasant sensation in the oral cavity (as happens, for example, with unripe fruits). Astringent is also said of a young wine, that "binds" because high tannin content. With aging the tannin decreases and the wine acquires greater softness.
