Blanquette

A classic preparation of French home cooking, blanquette owes its name to the fact that it is white. The ingredients, generally veal or chicken, should not be browned or enriched with colored sauces, but cooked covered with a light broth and finally enriched with flour, cream, lemon and egg yolks.
