Blue cheese is a term referring to a cheese with a green spotted texture, such as gorgonzola and castelmagno,. This texture is given by the formation of molds, caused by the development of "penicillium". In italian the cheese is called 'erborinato', a word that comes from «erborin», parsley in the Milanese dialect.
