Brussels chicory

Brussels chicory, also known as Belgian salad or Witloof chicory, is a type of chicory.

In 1845, the head gardener of the Brussels Botanical Garden discovered that some chicory roots had sprouted in the darkness of the cellar of his home, creating a particularly tender and delicate product with a very light color. From that moment and, for over twenty years, through a series of experiments, he came to produce what we all know today: delicate white leaves, slightly yellow-green at the tip, closely superimposed on each other.
