Caciotta

Caciotta is a term that indicates a cheese prepared in round, rather low shapes, weighing no more than one kilo. This name is given today to rather rustic cheeses that can be made with cow's milk, but also goat's milk or both. Caciotta generally has a thin crust and a soft paste with small holes; the flavor is more or less delicate, depending on the seasoning.
