Calzone

The calzone is a typical preparation of southern cuisine, now widespread throughout Italy. It consists of a bread dough casing in which minced mozzarella and ham are enclosed and, sometimes, even ricotta, provolone and an egg.

The bread dough is slightly enriched with a little oil or lard; then roll it out in a disk, like that of a pizza, put the "filling" in the middle and fold the dough over it, forming a crescent . The calzone is usually baked in the oven, but can sometimes be fried.
