Canestrato

Canestrato is a pecorino cheese that is produced both in Puglia and in Sicily. It is named after the custom of preparing it in rush baskets from which it takes its shape. It is a cheese made with sheep or cow's milk and has a semi-hard or hard texture, depending on the seasoning. It has also a cylindrical shape, a weight ranging from 1 to 2 kilos and a yellowish rind.
