Cappon Magro

Cappon magro is a typical Ligurian dish made up of a great variety of ingredients, and for this reason considered a unique dish. Why this name? Perhaps due to the presence of the capon fish (or capon), or due to its tall and almost rounded shape that can resemble a capon. In reality it has nothing to do with the bird, since it is an absolutely lean preparation, in essence a large salad where the basic ingredient is a biscuit, combined with various vegetables and different types of fish (in some cases it is lobster is also included).

It is a dish that over the centuries has undergone many variations and the original recipe (which included crackers, green beans, potatoes, celery, cauliflower, carrots, beets, salsify, mushrooms in oil, shrimp, lobster, anchovies, musk, hard-boiled eggs , capers, breadcrumbs, pine nuts, garlic, parsley, olive oil), now no longer in use, has been replaced by some lighter versions.
