Cervelas

Cervelas is a type of sausage produced in France, Switzerland and parts of Germany. It is made with pork, then mixed with a certain amount of fat and finally cooked. There are different kinds of cervelas: coarse, fine and smoked; they are used for French cabbage soup, called «choucroute», or they can be sautéed with potatoes.
