Cumberland is a typical English sauce, its name derives from the Duke of Cumberland, brother of George III of England. It is prepared with orange and lemon juice, seared shallot, English mustard, port, redcurrant jelly, cayenne pepper and ginger: Everything is then served in a gravy boat and garnished with julienned orange and lemon peel. This sauce usually accompanies game and baked ham.
