Dab

Dab is a sea fish belonging to the Pleuronettidae family, present in the north-eastern Atlantic Ocean, in the Bay of Biscay and along the coasts of Ireland. It has an oval body that reaches a length of 40 cm. Phisically its head is not too big, its mouth is small, while the eyes, as in all flat fishes , are placed only on one side. On this side, the skin tends to brown-gray, on the blind side it is whitish in color.

The dab has tasty and highly appreciated meats. In Italy it is found whole or in frozen fillets; the meat should be cooked briefly to prevent it from falling apart.
