Dauphine

Dauphine is a French term that indicates a potato-based preparation, very common in international cuisine. The potatoes, cooked and reduced to puree, are mixed with choux pastry; the mixture is then divided into small balls and fried in boiling vegetble oil. Dauphine potatoes accompany also roasted meat and game.
