Pérignon Dom Pierre

Pierre Dom Pérignon was a Benedictine monk from the abbey of Hautvilliers credited to have created the «champenoise» method, that implies mixing grapes from different varieties and adding sugar to the wine to cause a second fermentation in the bottle. One of the most famous Champagne brands took its name from him.
