Entremets

Entremets is a French term which, translated literally, means "interlude" and refers to a preparation that is in the middle of lunch.

However, to understand its right place, one must go back in time, when the entremets was a set of foods served after the roast, that is, vegetables and "sweet" dishes. Over the centuries, the entremets underwent some changes, while remaining placed in that specific dining space. Today, it is normally served after cheese and is typically a cream or flan.
