Margherita pastry

Margherita pastry is similar to sponge cake in consistency; it is in fact prepared cold with the same ingredients and it has the same appearance as well as the same softness. It takes its name from Queen Margherita, who had a sweet tooth for this kind of dough. It is used to fill cakes.
