Marrow

Marrow is a fatty substance found inside long bones (for example, those of the shank). It should not be confused with the spinal one which in gastronomic jargon is called "vein" or "backrest".

The most used marrow is that of beef, which should be blanched for a few minutes in order to eliminate the sanguine or fleshy parts that, with cooking, would become black.
