Mustard

Mustard is a herbaceous plant of Mediterranean origin, which produces strongly aromatic seeds, usually light yellow or blackish depending on the species. From the seeds, previously washed, is possible to obtain products either in powder or cream, which are then used to flavour foods.

The most famous mustards are the French ones, prepared with seeds of a single type or with two varieties, mixed and enriched with other aromatic elements in order to acquire a more or less spicy taste.

Another kind is the English mustard. Sold mainly in powder, it is of a golden yellow color (given by the presence of turmeric, which intensifies its flavour).

Mustard is used both alone to flavour boiled and roasted meats or in the preparation of vinaigrettes and sauces.
