The amelmosco, also known as ocher or bamia, is the fruit of a variety of hibiscus native to India .

From here this curious vegetable spread to the south eastern basin of the Mediterranean.

Its consistency becomes slightly sticky during cooking, while the tasteless pulp takes on the taste of the sauces with which it is cooked.
