Stracotto

Stracotto, which in Italian literally means 'overcooked', is a dish made usually with a piece of beef, browned with lard in a casserole, preferably of terracotta, then cooked with the gradual addition of red wine and, sometimes, of vegetables. The cooking of this course is long and slow; the pot must be kept well covered, so that the meat cooks with its steam.
