Peach melba

Peach melba is a dessert of peaches cooked in vanilla syrup, presented on a bed of vanilla ice cream and raspberry sauce. It takes its name from an opera singer of the last century, Nelly Melba, to whom the famous chef Auguste Escoffier dedicated this preparation. This dessert was once served in a whipped egg white "swan", today the peach melba is served simply in large dessert bowls.
