Soubise

Soubise is a term indicating a preparation both in the form of sauce or of mashed potatoes with onions. The definition "Soubise" or "à la Soubise" is refered to the Marshal of France, Charles de Rohan, Prince of Soubise, who, like most of the 18th century aristocrats, loved devoting himself to cooking. The sauce usually accompanies hard-boiled eggs, while the puree is served as a side dish for meat, or it can be used as a stuffing for vegetables.
