Sponge cake is a soft and light pastry, prepared with long whisked eggs, sugar, starch and flour. It is generally used as a base for stuffed and glazed cakes, in this case the sponge cake is cut into slices and soaked in liqueur. This kind of dough is also used for the preparation of zuccotto and trifle.
