Stracchino

Stracchino is an Italian term used in Lombardy to define all soft cheeses prepared with the milk of cows returning from the pasture; for this reason they are tired, adjective which in dialect is 'stracche', hence the name 'stracchino'. For example, crescenza and robiola belong to the stracchini family; these are soft cheeses of white and creamy texture, which have no rind and so can be spread on bread. In the past they were produced only in winter, but now the food industry supplies them all year round. However, in summer their texture is not as soft and creamy as in the cold months.
