To lacquer

The verb lacquer indicates a typical operation of Chinese cuisine which consists in brushing the skin of a bird (usually duck) or a pig, with a mixture based on honey, soy sauce, vinegar and aromatic herbs.

This operation, carried out before and during cooking, allows the skin to become crisp and take on a shiny brown color.
