Famous sauce derived from velvety, similar to the bechamel sauce. Aurora sauce is obtained by mixing a quantity of velvety sauce with very thick tomato sauce. The mixture is then passed through a sieve and enriched with butter. This sauce is great with eggs, poultry and fish. It should not be confused with the cocktail sauce which, despite having the same color, is based on mayonnaise and Tomato Ketchup.
