Bacon is a cured meat produced with pork belly, it comes in mixed layers of meat and fat. There are several varieties of bacon: the so-calledtesa, salted and matured for a minimum of twenty days before being put on the market. It is used as a condiment.

The second one is the so-called rolled variety: lean bacon, flavoured with pepper and cloves, then rolled up. It is sold sliced like ham.

The third type is the coppata, which is rolled up on a piece of coppa; like the rolled bariety it is sold in slices. Finally there is guanciale, produced from pig's cheek.
