Black cabbage is a variety of cabbage also known as Tuscan cabbage. This vegetable, unlike other types of cabbage, has no rounded shape, but it is made up of curled leaves, of a very dark green, grouped in an elongated head. It is a typically winter vegetable and in Tuscany it is used above all for many soups, including the famous 'ribollita'.
