The boero is an Italian small sweet made of chocolate that packs a cherry liqueur. The cherry is first dipped in dark chocolate melted in a bain-marie and flavored with liqueur; then, when the first "cover" has dried, the small cake is dipped again in melted couverture chocolate. This, drying up, will form a consistent casing, inside which will be found, in addition to the cherry, even a small dose of liqueur.
