Brandade is a typical preparation of French cuisine and, in particular, of the Nîmes area. It is prepared with cod. The fish is boiled, then chopped and worked for a long time with a spatula, adding hot milk and oil at the same time, until a soft mixture similar to mashed potatoes is obtained. The recipe that has become a classic of French cuisine is also prepared using cream instead of milk and oil and adding black truffle.
