Bresaola is a specialty originally from Valtellina and, today, produced almost all over Italy. It is beef (bottom sirloin, fillet,) salted, marinated with different flavors, and seasoned. It is tasted thinly sliced and seasoned with oil, lemon and pepper. Its flavor is more intense than that of ham and, since it is a lean product, it is particularly suitable for diets.
