Canestrello

Canestrello is a bivalve mollusk, also called comb, with a shell crossed by streaked ribs (there can be 20 in the specimens measuring about 8 cm in diameter and up to 30 in the larger ones). The color of the shell ranges from white to red to brown. Canestrello is a very common molluskin Veneto, where it is caught both in the lagoon and in the open sea. It lives in sandy bottoms and for this reason it should be kept in the water for a long time before using it, changing the water often, so that it drains most of the sand. The best season to enjoy it is winter. It is excellent in soups, risottos and even fried. On the market it is also already shelled.
