Alla Carrettiera is a term referring to particularly robust dishes (once the carters carried out most of the city's heavy goods and were considered strong eaters!). Specifically, this term refers to a type of pasta sauce made with pieces of meat, tomato and chilli; it is a typical recipe of Abruzzo, from which numerous regional variations are derived.
