Cenci is a Tuscan regional term indicating fried sweets, which are usually prepared around Carnival. This type of preparation takes different names depending on the region, even if the recipes are similar (in Lombardy they are called «chiacchiere», in Emilia «frappe», in Veneto «galani» etc.). The dough is made with flour, butter, sugar, eggs and a distillate (grappa, rum or brandy). Then a sheet of dough is obtained, which is cut into strips, squares or lozenges. Finally the strips or squared are fried and served sprinkled with powdered sugar.
