Charlotte is a delicate spoon dessert, prepared in a truncated cone mold called precisely 'charlotte'. The elements that make up this cake are biscuits (usually ladyfingers) or sliced sponge cake with which the walls of the mold are coated. Inside this dessert there is a cream prepared with gelatin sheets (Bavarian type), scented with liqueurs or vanilla. The cold charlotte seems to have been prepared for the first time by Carême. However, charlotte can be also hot, made with fruit puree and then baked.
