Chinese cabbage is a variety of cabbage that is not very common in Italy. In Europe only two types are known: the "pé-tsäi" which looks like a large romaine lettuce and has a head up to 50 cm long as well as wide and flat leaves. It can be eaten raw, cut into strips. Then there is the «pack-choï» variety, with rib leaves similar to those of celery, elongated, with smooth edges and a length between 20 and 50 cm. It is eaten both raw and cooked.
