The chinois is a conical shaped colander with a long handle. It exists in two different versions: one with a very dense metal mesh (to filter broths, sauces and creams that must be fine and velvety) and another with a slightly wider metal mesh (used to pass thicker sauces). It is used with a pestle, which helps in eliminating any lumps remained.
