Cracklings

Cracklings are small pieces of meat obtained by cooking the pork's fatty parts (sometimes also goose). Its brownish color is more or less clear, depending on the temperature of the cooking.

Very tasty and rich in fat, cracklings are often used in regional cuisine (especially in Emilia Romagna and Lazio), but they can be even made in the shape of a cake, and flavoured with aromas and spices.
