Cloves are one of the best known and most ancient spices, in fact it was already known in China several centuries before Christ. It is obtained from an evergreen tree with large red flowers, native to the Moluccas and Indonesia. To obtain fragrant cloves, the flowers should be collected when they are still closed.
In the kitchen it is used in sauces, marinades, spicy wines and stews. However, since its aroma is quite strong, it should be used sparingly. Moreover, clove possesses therapeutic, antiseptic and pain relieving properties.
