Common dolphinfish is a variety of fish belonging to the family of Triglidi, characterized by large pectoral fins, which form a purple fan, and a large head with bony scales and spine. The best-known types are the gurnard hen, reddish-brown in color on the back and with a flesh that lends itself to being cooked stewed or in a pan; the lyre capone with firm, compact and delicate flesh and the earthen cap, smaller than the other specimens, with a red back that fades into the white of the belly.
