Concentrate is a substance that is largely deprived of its liquid component (water) by drying, evaporation or other means. For example, tomato paste is a sauce prepared with chopped tomatoes, which are seeded and cooked for a long time until the product is very thick. There is also a concentrate obtained with cooking "stocks" of meat or chicken, slowly cooked until they become a syrupy liquid. This concentrate is commercially available in bottles and is usually used in drops to flavour soups or sauces.
