Crab is a large crustacean with a cephalothorax that can reach a diameter of 40 cm. It has a yellow and red armor and two large chelae, that must be handled with great care. Like all crustaceans, the crab should be cooked while still alive. Its freshness can be recognized by the firm and fleshy pulp.
