Cracker

Cracker is a term deriving from the English "to crack" which means "to break" and refers to an exclusively industrially produced wheat flour 'biscuit'. Its preparation is almost identical to that of bread, even if it requires a longer leavening and division into two stages.

It is a mistake to believe that this product, due to its lightness, is indicated in diets; in fact, having a lower humidity of the bread, it has a higher energy concentration as well as a higher percentage of fat.
