Crispy chips of polenta

1 Clove garlic
1 Egg white
3 oz Creme fraiche
Chives
7 oz Quick cooking polenta
2 tbsp Peanut oil
17 oz Polenta
Salt
2 tbsp Extra virgin olive oil
12 oz Porcini mushrooms

​For the preparation of crispy polenta chips, it is first necessary to cut the porcini mushrooms into slices and brown them in a pan with olive oil and garlic for a few minutes: they must be dry and golden. Remove garlic, add salt and finely chop with the mix.

Then mix the porcini mushrooms with the fraiche creams and finely chopped chives; whip the egg white with a pinch of salt, add to the mushroom mixture, salt rule.

Prepare the polenta by reading the instructions on the package. Then, put it on a cutting board and let it cool. Cut the polenta into about 0.5 inch thick slices, dip in yellow flour and fry in plenty of peanut oil until golden and crispy. Drain the chips on kitchen paper and serve them still hot accompanied by mousse.
