Croaker

The croaker is a sea fish belonging to the Scienidae family, which generally lives along the rocky coasts. It can reach a maximum length of one meter and is physically characterized by an elongated, slightly humped and laterally compressed body and small eyes; depending on the type, it might have bristles under its jaw.

It also has a silvery color with metallic nuances, skin covered with large scales, while on the sides it has numerous wavy diagonal lines of golden color, also edged in black. It is widespread in the western Mediterranean as well as in the Black Sea and the Eastern Atlantic.

The croaker is a fairly prized fish with excellent,white, delicate and highly appreciated meats. It can be cooked in traditional ways (boiled or roasted) but its meat is improved above all by stewing.
