Erbazzone is a preparation of the Reggio cuisine. It is a savourycake with vegetables (beets or spinach) enclosed in a dough, then baked in the oven. There is another version that does not include the wrapping of pasta, in this case the ingredients are combined with eggs and grated cheese and cooked in a pan like an omelette.
