Smooth calm is a bivalve mollusk, belonging to the Veneridae family. It has a double shell, shiny, brick red in color, with more or less dark streaks. It can reach ten centimeters in diameter.
The mollusk is white and red, tender and very valuable. Smooth clam is excellent raw, as long as it is fresh, but it can still be cooked like clams, even in soups.
