Finocchiona is a typical Tuscan salami, characterized by a large diameter (it can even reach 20 cm) and a rather soft texture. It is generally prepared with only pork flavoured with wild fennel seeds (hence the name), garlic, salt and pepper. This type of salami is subjected to a fairly long seasoning (from seven to twelve months) and goes well with the typical Tuscan bread (it has no salt).
