Flan is a French term referring to a sweet or savory preparation made in a springform pan. It is generally composed of a base of shortcrust pastry on which sweet or savory mixtures of soft consistency are arranged; it is then baked in the oven. Even a cooked and sometimes caramelized, cream is called flan.
