
Flounder is a sea fish belonging to the Pleuronectidae family which lives in the northwestern and northeastern Atlantic. It can reach a maximum length of 50 cm. This type of fish is characterised by a flat and oval body, covered with rather extensive scales, a large mouth and big eyes, both located on one side. The skin on the ocular side is of a uniform grayish brown while the blind one is whitish.
On the market the flonder can be found fresh, frozen or filleted . Its flesh is watery and not too savory. The smaller specimens are usually floured and then fried , whereas the larger ones are prepared in the same way as the turbot.
